Chatthai Bistro is an authentic Thai restaurant in Pahrump, NV, founded in 2015 by a U.S. Navy Veteran owner who was born and raised in Thailand. Chef Chatree “Chat” Soisoongnoen, born in Nakhon Ratchasima, Thailand, moved to the US with his family in 1991. Chat, the Founder and Executive Chef of Chatthai Bistro, developed his passion for cooking alongside his mother. His culinary journey, however, truly took shape during his service in the US Navy. Being away from his mother’s comforting dishes spurred him to learn and recreate those flavors, planting the seeds for Chatthai Bistro.
Upon returning from the Navy in 2006, Chat was eager to open a restaurant with his mother, Pat, who boasted over 30 years of experience in every role from dishwasher to Executive Chef. Despite Pat’s initial reluctance, Chat’s persistence paid off, and after seven years, she agreed to join him in crafting an authentic Thai dining experience. The restaurant needed a name, and a serendipitous conversation with Chat’s brother-in-law, Michael, led to the creation of “Chatthai.” The name, a play on Chat’s American nickname and the Thai word for “Born to be Thai,” perfectly encapsulated their vision.
Chatthai LLC officially launched in January 2015, and since then, Chef Chat has dedicated himself to building a menu and brand that stay true to Thailand’s rich culinary traditions.
